Greek Lentil Soup

Ingredients
1/2 tbsp olive oil1 small onion, diced2 garlic clove, diced1 carrot, peeled and diced1 celery stalk, diced2 c low sodium chicken broth1 bay leaf1/2 c dried lentils, rinsed3/4 c no salt added diced tomatoes, incl juice1/4 tsp thyme1/4 tsp basil
Directions
Heat oil in medium saucepan; add onion and saute until soft. Add garlic, carrot and celery. Saute until tender.

Add broth, 1/2 c water, and remainin ingredients. Bring to boil then reduce and simmer about 15-20 min, until lentils are tender.

Remove bay leaf and serve.
