Sugarless Applesauce & Oatmeal Cookies

Ingredients
1 cup flour2 tsp cinnamon1/2 tsp salt1 tsp baking soda1/2 tsp nutmeg1 tsp cloves1 tsp allspice1 cup quick dry oatmeal1 cup unsweetened aplesauce1/2 cup light olive oil2 medium eggs2 tsp vanilla1/2 cup raisins
Directions
Mix dry ingredients and raisins. Add applesauce, oil, eggs, vanilla and mix just to moisten. Drop on greased sheets. Bake at 375 degrees for about 12 minutes.

    I used a mixture of McCann's Irish Oats and Mornflake's Scottish Oats, both are a hardier oat than your typical rolled oat. I used halfsies of dates and raisins and added 1/2 cup of walnuts. Can't have an oatmeal cookie without nuts. - 2/10/11
