Ingredients
Neufchatel Cheese, 32 ozEgg, fresh, 4 largeVanilla Extract, 1 tspCinnamon, ground, 1 tbspMilk, nonfat, .5 cupSugar, 3/4 Cup
Directions
Preheat oven to 350F.

Spray 9" pie pan with non-fat cooking spray.

Mix ingredients together using an electric blender in a large bowl.

Pour mix into pie pan.

Bake at 350F for 40-50 minutes.

Remove from oven and cool on a cooling rack. Place in refrigerator at least 4-5 hours to firm up.

Makes 8 servings (slices).

    This was actually delicious! I used Splenda granular in place of sugar and evaporated milk for true low carb I served with a few blueberries on top and it was a great treat! Thank you! - 1/16/12
