Apple Turnovers

-1 sheet of puff pastry-3 Granny Smith apples, peeled, cored, and chopped-1/2 cup sugar-1/4 tsp cinnamon-1/8 tsp ginger-1/8 tsp nutmeg-1 egg white, lightly beaten
-Preheat oven to 425 degrees.
-Roll out the puff pastry into a thin 9x15 sheet. Then cut into 6 equal squares. Set aside.
-Boil 1 cup of water with the 1/2 cup sugar
-Sprinkle the apple chunks with the cinnamon, nutmeg, and ginger.
-Once water is boiling, add the apple chunks to the pot. Simmer for 5-7 minutes until liquid begins to thicken.
-Let apple mixture cool for 5 minutes.
-On a baking sheet, add 2 tbsp of apple mixture to each pastry square, off center, and fold pastry into triangles. Squeeze edges together with a fork until they are sealed.
-Brush each triangle with the egg white.
-Bake for 12-15 minutes until pastry is golden brown.
