Spicy Shrimp Pasta

1 T olive oil3 onions, chopped6 garlic cloves, chopped1 (28 ounce) can diced tomatoes1/4 cup dry red wine2 T chopped fresh oregano or 2tsp dried1/2 tsp crushed red pepper1/2 tsp salt1/4 tsp coarsely ground black pepper1 1/2 lb large shrimp peeled and deveined3/4 pound whole wheat pasta
1. Heat oil in a very large nonstick skillet. Add onions and garlic. Saute until golden, about 10 minutes. Add tomatoes, wine, oregano, peppers and salt. Bring to a boil and then simmer until the sauce is slightly thickened, about 15 minutes.
2. Cut shrimps in half and add to the sauce. Simmer uncovered until shrimp is opaque, about 5 minutes.
3. Cook pasta according to directions and place in a large serving bowl. Toss at once with sauce and serve.
Makes 6 servings. (scant 2 cups each)
