Ground Turkey & Cheesy Enchiladas

Ingredients
1 lbs Ground Turkey8 Ole High Fiber Low Carb Tortillas1 cup shredded Mexican four cheese blend 2% fat1/2 cup chopped white onions1 Cup Pace Medium Salsa3/4 cup part-skim ricotta 1 can (10 ounces) enchilada sauce 4 Tbsp diced green chilies 4 Tbsp sliced black olives
Directions
Preheat oven to 350 degrees.

Brown your ground turkey and onion in frying pan. Drain.

Mix together the meat, ricotta cheese, salsa, green chiles and salt and pepper to taste. Add half cup of the shredded cheese. Mix until ingredients are blended.

Spray a 9X13 casserole dish with non-stick spray.

Place approximately 1/8th of the meat/cheese mixture (about 1/4 cup) on a tortilla and roll, tucking in the sides. Place seam side down in casserole dish. Repeat until all tortillas are filled.

Pour the enchilada sauce evenly over the enchiladas.

Bake for 15 minutes. After 15 minutes, sprinkle the rest of the shredded cheese and the black olives on top. Return to oven for 10 more minutes.

Serve w/ a dollup of Fat Free sour cream (not included in nutritional value).

Makes 8 servings
1 Enchilada per serving.

    Hey Julie! It's a red sauce...you'll find it down the aisle with the mexican items... Usually in a can. I hope you like it! I'm making this tonight for my sweetie for Valentine's Day. He loves mexican!
