Ingredients
Ingredients for the cupcake batter:1-3/4 cup millet flour1/4 cup rice flour3/4 cup mayonnaise1/2 cup applesauce, unsweetened3 large eggs1-1/2 cup water.75 tsp baking powder1/2 cup or more to taste of stevia in the raw.5 tsp baking soda1/2 tsp salt, optionalFilling:3 tbsp whipped cream cheese1/2 cup walnuts1 egg30 pcs Ghiradelli Chocolate 60% Cacao Bittersweet chips
Directions
Mix together the cake batter ingredients....
Thefilling ingredients mix in a food processer. This is the filling that you drop on top of each cupcake prior to baking
Makes about 18 cupcakes.
Pour batter into paper lines cupcake holder about 1/2 full and add a spoon full of the filling. Bake for the 25 minutes ...cool and enjoy
Bake at 350 for about 25 minutes
