Asian Ginger Beef over Bok Choy

Ingredients
2 tbl peanut oil1 1/2 lbs stew meat3 green onions cut into 1/2 in slices6 cloves garlic1 can chicken broth1/4 cup lite soy sauce2 teaspoons ground ginger1 teaspoon asian chili paste9 ozs vermicelli, cooked and drained9 ozs bok choy, trimmed, washed and cut into 1 inch pieces
Directions
makes 8 1 1/2 cup servings
heat oil in large skillet over medium high heat until hot, sear beef on all sides in batches to prevent crowding, turning each piece as it browns, Sear last batch of beef with onions and garlic.
transfer to crock pot, add broth, soy sauce, ginger and chili paste. Stir well to combine. Cover, cook on High 3-4 hours, or low 7-8 hours or until beef is very tender
just before serving turn crrock pot to high. add noodles to crock pot and stir well, add bok choy and stir again. Cook on high until bok coy is tender--crisp about 15 mintues
