Apple Cinnamon Oatmeal

2 cups non-fat milk1 tablespoon butter (I used Smart Balance)1 cup quick-cooking oats2 tablespoons ground cinnamon1 cup peeled chopped apple.12 of a cup chopped pecans (1/2 of a 1/4 cup)Cinnamon Oat Nut Topping:3 Tbs. packed brown sugar1 tablespoon ground cinnamon2 tablespoons chopped pecans3 tablespoons oats
Preheat the oven to 350 degrees F. Grease a medium casserole dish or individual baking custard cups.
Combine the milk, and butter in a heavy saucepan over medium heat. Simmer until the butter is melted and the mixture is smooth. Remove from heat. Add the oats to a casserole dish and stir in the milk mixture, cinnamon, apples,and pecans.
Note: If the casserole seems dry, add milk to moisten.
Top with Cinnamon Oat Nut Topping . - Mix all Oat toppings in a little bowl and sprinkle over top of oatmeal mixture.
Bake for 20 to 30 minutes. Remove from the oven and serve
Make 2 servings - but you could share one, there pretty big!
