Nuts & Seeds Granola (Paleo & Gluten Free)

1/3 cup honey1/3 coconut oil1 tsp. cinnamon1 tsp. nutmeg2 cups whole almonds1 cup pecan halves1 cup pumpkin seeds (hulled)1 cup sunflower seeds (hulled)1/4 cup sesame seeds1 cup macadamia nuts, dry roasted1/3 cup dried cherries1/3 cup raisins1 cup unsweetened flaked coconut
1. Bring honey and coconut to a boil in a small saucepan. Stir in cinnamon and nutmeg.
2. In large mixing bowl, combine almonds, pecans, pumpkin seeds, sunflower seeds and sesame seeds. Pour hot honey mixture and stir until coated.
3. Pour nut mixture onto greased sheet pan and bake at 300 degrees for 1 hour, stirring every 10-15 minutes.
4. Let nut mixture cool, toss in remaining ingredients and store in air-tight container.
