Barbeque Sandwich for lunch

Ingredients
2 chicken thighs2T bulls-eye barbeque sauce2 slices Earth Grains Wheat Berry bread
Directions
Place 2 frozen chicken thighs on a plate, cover with plastic wrap (leaving a small vent) and microwave for 20 minutes, or untll the chicken is cooked through.

Place the thighs on a cutting board and use 2 forks to remove the skin and bone and shred the chicken finely.

Place in a small bowl, add the BBQ sauce and toss. Serve each person 1 piece of bread with 1/2 the chicken mixture. Top with sliced onions, low-fat cheese, and serve a salad on the side!
