Indian Masala Tofu Veggie Saute

1 large onion, sliced thin1 large red pepper chopped1 12 oz package mushrooms, sliced 1 cup organic low sodium vegetable broth, 1 to 2 cups½ cup organic soy milk, unsweetened¼ white wine 12 oz package Indian Masala Tofu by soyfoods, diced (very flavorful)1 bunch kale, chopped ½ cup baby carrots
1. Saute onions, mushrooms and peppers in broth until tender
2. Add the next soy milk, wine and tofu and blend together on high heat
3. When mixtures begins to bubble, turn to medium heat and simmer few minutes for flavors to mix.
4. Pour over steamed kale and carrots
Server with brown rice and tossed salad if desired.
