Creamy Broccoli White Bean Soup

Broccoli, fresh 1 lbOlive Oil 1 1/2 Tablespoon Onions, raw, 1 medium (2-1/2" dia) Garlic, 2 clove Cannellini White Kidney Beans, 1 15oz canChicken Stock 2 1/2 cupsSalt, 1/2 tea or to tastePepper 1/2 tea or to tasteParmesan Cheese, grated, 4 tbsp
- Steam broccoli florets and stems until tender and bright green, about 3 minutes. Let cool slightly. Reserve 1/2 cup florets for garanish.
- Heat oil in pan on med hear. Saute onion and garlic until translucent about 6 minutes. Add beans and stock and bring to simmer. Remove from hear and add broccoli: puree in batches in blender until smooth. Season to taste with salt and pepper. Garnish each bowl with broccoli and 1 tablespoon parmesan cheese.
