Honey Wheat Bread

Ingredients
3 c. whole wheat flour1 c. nonfat dry milk2 packages dry active yeast3 c. water or potato water1/2 c. honey2 tbs. oil (olive oil for the heart concious)1 additional c. whole wheat flour4 to 4-1/2 c. white flour
Directions
Mix together 3 c. of wheat flour, 1 c. of nonfat dry milk, 2 packages of active dry yeast, and 1 tbs. salt in a large glass or metal bowl.
Heat in a sauce pan 3 c. of water or potato water, 1/2 c honey, and 2 tbs of oil. Stir to even temperature. Do not heat above 130 degrees F. Pour over dry mixture. Beat with an electric mixer for 3 minutes.
Add 1 c. whole wheat flour. Add 4 to 4-1/2 cups white flour as needed with kneading. Knead for 5 minutes.
When complete, place dough in greased glass or metal bowl. Flip once and cover. Allow to rise until double in size.
Punch down the dough, separate and shape into two loaves. Place loaves in greased bread pans and allow to rise until double in size.
Bake at 375 degrees F for 40-45 minutes.
Makes 2 loaves (about 30 slices total)
