Ingredients
1 large head cauliflower1/3 cup cream4 ounces cream cheese1 T buttersalt and pepper
Directions
1. Simmer the cauliflower in water with the cream added to it. When cauliflower is very soft drain thoroughly.

2. Put the still warm cauliflower in a food processor or blender with the cream cheese, butter and salt and pepper to taste and process until smooth. Do in 2 or more batches if necessary.

I assume it makes 6 servings -- haven't tried it yet. I'm just resubmitting it so all ingredients are included in nutritional info. I may come back and edit later.
