Whole Grain Banana Oat Pancakes

3/4 C. dry old fashioned oats2 cups skim milk1 cup whole wheat flour1 T. baking powder1 egg2 bananas, very thinly sliced1/4 cup walnuts, choppednonstick cooking spray
Mix the dry oats and milk together in a medium bowl. Let the mixture sit for 5 minutes to give the oats some extra soaking time.
In a separate bowl, mix the whole wheat flour and baking powder together with a fork, making sure the baking powder is well distributed. Add the mixture to the soaking oats and stir. Gently add the egg. Next, fold the banana slices and nuts into the batter.
Heat the griddle over medium-high heat and lightly coat with cooking spray. Use /4 cup of the batter for each pancake, cooking over medium heat. Cook for about 2 minutes or until bubbles appear on surface. Flip pancakes and cook for another minute or so.
Makes approximately 12 pancackes.
