Vegetarian Chili - modified

Ingredients
1 medium onion, chopped4 cloves of garlic minced1 TBS olive oil2 medium carrots, finely chopped2 cans black beans, drained1 TBS chili powder4 cups vegetable broth1 red pepper, diced1 6 oz. can tomato paste
Directions
1. Saute the onions and garlic in a large sauce pan
2. Add everything else
3. Bring to a boil, then cook on medium heat for about 20 minutes until carrots are tender.
