Oatmeal Pancakes

Ingredients
Old fashioned oats, 3/4 cup Flour, Whole wheat, 1/2 cup Brown Sugar, 2 TbsBaking Powder, 1 1/2 tspBaking Soda, 1/2Salt, 1 dash 1 large Egg, seperatedVanilla Extract, 1 tspMilk, nonfat skim, 1 cup Cider Vinegar, 2 tspButter, unsalted, 2 Tbs, melted
Directions
In either a blender or food processor, process the oats until a medium fine texture. Combine with the remaining dry ingredients. In a seperate bowl, combine the milk and cider vinegar and let set 3-5 minutes and then combine with egg yolk and vanilla extract. In another small bowl, beat the egg white until frothy and maintains stiff peaks. Combine wet and dry ingredients as well as the butter (melted) and fold in the egg whites. Fry in lightly oiled non-stick pan on medium heat. Makes 6 6" pancakes.
