Ingredients
1 cup canned pumpkin puree1 cup oatmeal flour (rolled oats put in the blender)1 cup liquid egg whites1/3 cup Agave nector4 scoops Whey Protein powder-Vanilla3 Tbs Whole Wheat Flour1 Tbs Canola oil (for skillet)
Directions
Make a flour out of the oats by whirring in a blender. Add all the ingredients to a bowl and mix. I also added cinnamon for flavor.
The Agave Nector is for sweetness, yo can eat these plain with no syrup. If you plan on adding syrup, you can leave out the Agave. The flour is for consistency, nothing else, so you can leave out. These are thick and filling! I put a dab of canola oil in the bottom of a skillet on medium heat. Once it was heated, I did 4 small pancakes per batch. each pancake was probably less than 1/2 a cup of batter. Wait until brown, flip, then they are done.

These don't have the light, fluffly texture of traditional pancakes, but they're very tasty. - 6/7/12
