Egg White Scramble

Ingredients
1 cup chopped onions1 cup red bell pepper1 cup chopped broccoli1 cup chopped mushrooms3 cups spinach3 cups liquid Egg Beaters egg substitute1/2 cup Kraft Shredded 2% Mexican Four Cheese blend1 Tbsp. olive oil
Directions
Put olive oil in pan over medium high heat. Add chopped onions, bell pepper, and mushrooms. Cook until soft, approximately 7 minutes. Add broccoli and spinach. Cook until spinach wilts. Add liquid egg whites. Cook until egg whites are done. Divide into serving dishes and sprinkle with shredded cheese. Makes 6 servings
