Vegan Banana Bread

Ingredients
6 very ripe bananas1 cup whole wheat flour1 cup unbleached flour1/2 cup sugar1 tsp vanilla 1 tsp baking powder1 tsp baking sodacinnamon to tasteginger root, grated, to taste
Directions
1. Mash bananas
2. Mix with sugar and vanilla until incorporated.
3. In a separate bowl, combine flours, baking soda and baking powder.
4. Combine dry ingredients with banana mixture (add optional nuts at this point).
5. Spray bread pan with cooking spray and pour in mixture.
6. (sprinkle optional cinnamon on top if you like)
7. Bake at 350 degrees for 1 hour.
8. Remove from pan and let cool on a wire rack.
