Mochiko Chicken

2 lbs boneless, skinless chicken breasts, cut into pieces4 tbsp Mochiko Flour (sweet rice flour)4 tbsp Cornstarch4 tbsp sugar5 tbsp soy sauce -- use tamari for gluten free2 eggs1/4 cup Chopped green onions1/2 tsp Salt2 Cloves of Garlic, grated
Makes about 8 servings, enough for leftovers!
1. Combine EVERYTHING in a plastic ziplock bag and marinate it in the refrigerator overnight.
2. In a large pot, add about an inch of oil and heat. Fry chicken in oil until light brown, turning pieces often to prevent sugar from burning.
