Ground Turkey Hash

Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) Turkey, Ground turkey, 93% lean, 8 oz Yellow Sweet Corn, Canned, 1 can (12 oz) Oikos Organic Greek Yogurt, Plain, 4 oz Salt and pepper to taste
Cut potatoes into small cubes. Cook in non-stick pan over med-high to high heat (add a thick layer of water that just covers the potatoes, and boil until the water evaporates out. Repeat)
Once potatoes are close to done, add ground turkey and "chop" up, letting the meat gain heat and start to brown. I like to cover my pan and let the meat cook in the steam for about 5 minutes.
Stir in corn. Once corn is thoroughly heated, add yogurt. You can add salt and pepper any time, I like to lightly salt the potatoes, then add salt and pepper to the entire dish before serving.
Makes 4 generous half cup servings
