Potato Pancakes a la Luuk

Ingredients
2 Russet Potatoes1 cup all-purpose flour6 tbsp vegetable oil1 egg, beaten0.75 cup chopped onionsPepper and salt to taste
Directions
Peel the potatoes and schred them in a food processor or by hand until you just pass the consistency of hashbrowns.
In a large bowl combine schredded potatoes, flour, beaten egg and chopped onions. Add pepper and salt. Mix well.

Once you have reached the consistency of a batter you are ready to fry them up in a large skillet. Add oil as needed and fry them up until cooked through and crispy and brown on the outside. They are typically a bit smaller than regular pancakes.
