Parmesean Pork

Ingredients
3lb pork roast2 tbs EVOO1 tsp Dried thyme leaves2 tbs chicken broth1/2 tsp salt1/4 tsp pepper1/2 cup shredded parmesean cheese1/4 cup grated parmesean cheese
Directions
Mix EVOO, thyme, chicken broth, salt & pepper in a bowl. Combine cheese in another bowl. Roll pork in the liquid mixture then in the cheese. Place on a roasting pan and sprinkle remaining cheese over the top. Roast, uncovered, for 40-50 minutes until meat thermometer reaches 155. Remove pork from pan and cover. Let rest for 10 minutes before slicing. Makes 12 4 oz servings
