Asian Chicken and Broccoli

1 medium stalk of broccoli8 oz boneless skinless chicken breast2 cloves garlic1/2 cup low sodium fat free beef broth1 tbsp low sodium soy sauce1-2 tbsp brown sugar1 tbsp cornstarch2 tbsp canola oil1 tsp sesame oil
1. Cut broccoli into florets and cube chicken into 1 inch cubes.
2. Stir broth, soy sauce, garlic, brown sugar, cornstarch and sesame oil together.
3. Add canola oil to skillet over high heat.
4. Add broccoli and chicken to skillet, let cook for 1-2 minutes.
5. Add sauce mixture. Cover, reduce heat to low, and cook for 3-4 minutes, or until chicken is completely cooked.
For a less sweet sauce, use less brown sugar. Serve over brown rice, or eat plain.

OMG! This was awesome!!! I added some freshly grated ginger root and water chestnuts, doubled the sauce (except for the cornstarch and brown sugar) and served over brown rice. Rivals the local Chinese restaurant! Thank you sooo much for this recipe! DEFINITELY a keeper!! And all under 400 calories! - 5/23/12
