potato 1 large, 1 medium onion sliced, 2 green peppers, 2 tbsp canola oil, 1 tbsp curry powder, kasoori methi dried 1 tbsp
heat oil, put onions and saute until golden brown, add cubed bell peppers and cook uncovered for few minutes. Meanwhile cook potato in microwave, peel and dice. Add curry powder and 1 tsp ginger garlic paste to the peppers. Add 1/2 tsp salt and cover. Cook until peppers are soft. Can add little water if need to reduce oil in the dish. It helps soften the peppers. Next add diced potatoes and mix well. Add more salt if needed. In the end add kasoori methi after cruching it in the hands and mix well.
