Leeks, Mushrooms and Spinach

Ingredients
1 tbls Extra Virgin Olive Oil3 whole Leeks, halved and thinly sliced12 oz Fresh Mushrooms, sliced1 1/2 tsp Garlic, chopped10oz bag Fresh Spinach2 fl oz White Wine1/4 tsp Kosher Salt1/4 tsp Black Pepper, ground
Directions
* Pour olive oil into pan and heat over med-high heat.
* Add the leeks and sweat them until almost translucent.
* Add the mushrooms and the garlic and continue to sweat till mushrooms are cooked. Be careful not to burn the garlic.
* Add the spinach and white wine and wilt .
* Season with salt and pepper.

Makes 6 servings.

    This was absolutely delicious! It would be even better with bacon, and sundried tomatoes. Although not nearly as healthy! So maybe just onion and sundried tomatoes! Good recipe honey! - 2/24/11
