Leeks & Sprouts with Edamame and Israeli Couscous

Ingredients
1 Leek, sliced thinly9 Fresh Brussels Sprouts, sliced in halves.6 Ni�oise olives1 Garlic Clove1 tsp Olive OilSalt to taste1/3 c. Tricolor Israeli Couscous
Directions
Prepare couscous per packaging.

Heat oil in pan (I used a wok, its how I roll.)
Saute garlic for 1 minute.

Add leeks and brussels sprouts, saute for 1 minute.
Add edamame.
Cook over medium-high heat until sprouts and leeks begin to carmelize (about 7 minutes).

Mix in couscous and olives and enjoy!
