Chicken breast 1 lb, EVOO 1 tbsp, butter 3 pats, 1/2 tsp black pepper, 1 tsp thyme, 1 cup sliced mushrooms, 1/2 cup cooking marsala wine, 1 1/2 cup low sodium beef broth, wholw wheat flour 2 tsp.
Cut chicken breasts horizontally making thinner pieces. Mix flour pepper and some salt and dredge chicken through it.
Heat oil in a skillet. Add chicken and cook both sides until browned, about 2-3 minutes each, then remove. Add 1 pat butter and mushrooms, cook until they start giving off liquid, add marsala wine and cook till it reducesby half. Add beef broth and cook until sauce thickens a little. Return chicken and cook for few minutes until cookes through. spoon in a pat of butter and salt and papper to taste
