Pumpkin Soup

Ingredients
About 4 pound fresh pumpkin, pulp and seeds removed, peeled and cut into small chunks (yeilds about 3 pounds)1 large sweet potato1 large sweet vadalia onion6-8 cups fat-free vegetable brothpepper to tastesalt to taste (optional)
Directions
Place all the above ingredients in a large stock pot, bring to a boil. Continue to boil until very soft. Puree.
