Apricot Bread

Ingredients
cooking spray 2 oz whole dried apricots3/4 cup skim milk2 cups whole wheat flour2 tsp baking powder1 tsp baking soda1/4 tsp salt1/2 tsp nutmeg1/4 cup unsalted butter, cold1/4 cup sugar2 oz raisins1 egg, beaten
Directions
Chop apricots into pieces and soak them in the milk for 4 hrs. Place the flour, baking powder and soda, salt, and nutmeg in a bowl and cut in butter. Add sugar and raisins. Make a well in the center and pour in the beaten egg and milk with apricots. Mix well to make a soft dough. Place dough in a 1-lb loaf pan sprayed with cooking spray. Bake 30 minutes or until your toothpick comes out clean. Cool 5 minutes in pan before turning out onto a wire rack to cool completely. Yield- one 1-lb loaf, 16 slices (serving size- 1 slice)
