Lizzy Chicken Broccoli Cheese Rice Bake

24 oz. boneless skinless chicken breast1 cup onion, chopped8 oz sharp cheddar cheese shredded1 can cream of mushroom soup 10.75 oz.2/3 cup fat free milk1/4 tsp pepperone 12 oz. bag of frozen broccoli3 cups cooked white rice1 cup seasoned bread crumbs
Heat oven to 350 and spray 13x9x2 baking dish with cooking spray
Boil chicken until done and cut into bite size pieces
Steam broccoli, I use the microwave
Cook onion in a little water until crisp but tender. Stir in cheese, soup, milk and pepper. Cook on medium heat until cheese is melted stirring frequently.
Stir in chicken, broccoli and rice. Pour into baking dish and sprinkle with bread crumbs. Bake uncovered 30-35 minutes or until light brown and bubbly around edges.
Divide into 8 equal servings
