Ingredients: 1 package lean ground turkey 1 onion finely chopped 1 small tomatoe chopped 3 garlic cloves thinly sliced 1 can vegetable broth plus water instant brown rice 1 egg or egg substitute (I use egg substitute) salt to taste 1/4 tsp cumin powder 1tsp oregano 1tsp pepper 1tsp adobo seasoning 1tbsp olive oil limes
In a pot saute onions, tomatoes and garlic in olive oil Add the vegetable broth and water and(how much depends on how much you want to make). Let it boil. When it starts boiling lower heat and let it simmer. Make sure to stir occasionally. Add salt to taste
In a large bowl mix ground turkey,brown rice, egg, cumin, oregano, pepper, and adobo seasoning. Mix together with hands. After mixing roll into small meatballs about 1 inch and drop in soup mixture. Let the soup simmer for about 15 minutes or until meatballs are cooked. Serve in bowls with a wedge of lime.
If you have left over meatballs you can use them in spaghetti or to make a meatball sub. Enjoy!
