1 can (1 3/4 cup) canned pumpkin (not pumpkin pie mix)1 cup Stevia Extract in the Raw1 scoops Vanilla Casein (I like Optimum Nutrition Creamy Vanilla)1/2 Rice Flour (I blend long grain brown rice in the blender to make this)1/2 cup Instant Oats1/2 cup Rice Milk1/2 water1 Egg1 tsp. Vanilla Extract1 tsp. cinnamon1 tsp. pumpkin pie spice1 tsp. baking soda1 tsp. baking powder
Preheat oven to 425 degrees. Grease a 12-muffin muffin tin. Set aside.
Mix all ingredients together. Pour equal amounts in muffin tin. Sprinkle some cinnamon on top of the muffins. Bake for 20 minutes.
