* Rotel Original Diced Tomatoes & Green Chilies (10 oz can) * Green Giant Mexicorn (11 oz can) * Green Chilies, Diced (4 oz can) * Black Soy Beans (Eden) (1 can) * Diced Jalapeños, 1 tbsp * Extra Light Olive Oil, 2 tbsp * Cilantro, dried, 2 tbsp * Scallions, raw, .5 cup, chopped * Garlic, 3 cloves, chopped * Red Wine Vinegar, 2 tbsp
Mix olive oil & red wine vinegar in bowl. Drain each of the canned ingredients & add to bowl. Add scallions, jalapeño, garlic & cilantro. Mix well. Flavors are enhanced if you let it sit in the refrigerator overnight.
