lower sodium onion soup

Ingredients
32 oz. kitchen basics no salt added beef broth2 lbs, thinly sliced onion1 finely chopped clove of garlic1 tbl dried thyme1.5 tbl canola oil1 tsp better than bouillon chicken base2 oz dry sherry6 slices sargento reduced fat provolone cheese1 bay leaf
Directions
Slowly saute onion and thyme over medium low heat in heavy stock pot until onion is light brown.
Add chopped garlic and cook about 2 3 minutes more stirring often.
Raise heat to medium high and add sherry stirring to loosen any brown bits in bottom of pan.
Add broth, water, chicken base, and bay leaf.
simmer for 30 min over low heat
add pepper to taste
place in oven proof bowls and float 3 toasts on top and then top with one slice of the cheese.
place under broiler 2-4 minutes until cheese browns slightly and melts
