3 large eggs3/4 cup liquid egg whites (or 3 egg whites)1/4 cup low fat evaporated milk2 tbsp low fat sour cream1/4 cup onions, chopped4 oz smoked salmon, flaked1 cup asparagus, diced1/4 cup sun dried tomatoes, diced
Preheat oven to 350°. Whisk eggs, egg whites, milk and sour cream together with whatever spices you choose. Add the remaining ingredients and mix well. Pour into mini loaf pan or muffin tin that has been prepared with cooking spray. Bake for about 20 minutes, or until a knife insert in the center comes out clean. Makes 8 mini loafs or 12 muffins. 1 mini loaf = 114 calories; 1 muffin = 76 calories.
