Turkey carcass soup

Ingredients
Onions, raw, 2 medium (2-1/2" dia) Carrots, raw, 3 medium Chicken Broth, 8 cup (8 fl oz) Turkey (light meat), 1 cup, chopped or diced (from the turkey carcass)Celery, raw, 4 stalk, medium (7-1/2" - 8" long) *Potato, raw, 2 large (3" to 4-1/4" dia.) Pasta, cooked, 8 oz
Directions
Chop celery, onions, carrots and put into a large stock pan.

Put turkey carcass (saved from the turkey dinner Ok to freeze and use later as well) in a large stock pan along with the cut up vegies. I also added a couple bay leaves, some poultry seasoning and dried thyme. Cover with chicken broth and enough water to cover the carcass.

Now bring to a boil, and simmer 3-4 hours on low heat until the bones are clean. Strain the broth, and discard bones, vegies, skin.

Now add more carrots, celery, the potato to the broth. You can add any other vegie as well such as green bean, peas etc. Simmer until vegies and potato are done about 15-20 minues. Add pasta of choice (I use the mini farfelle, or tiny stars) and cook until al dente...

Serve with rolls or cornbread.
