Ingredients
1 BEATEN EGG3/4 CUP SOFT BREAD CRUMBS1/4 CUP CHOPPED ONION2 TBSP MILK3/4 TSP SALT1 POUND GROUND BEEF OR PORK2 TBSP COOKING OIL1 CAN PINEAPPLE CHUNKS1/3 CUP BARBECUE SAUCE1/4 CUP ORANGE JUICE FROZEN CONCENTRATE, THAWED1/2 CUP SUGAR FREE APPLE JELLY1/4 TSP SALTDASH PEPPER2 TBSP WATER1 TBSP CORNSTARCH1 MEDIUM GREEN PEPPER, SLICED INTO STRIPSHOT COOKED RICE
Directions
in large mixing bowl combine the egg, bread crumbs, onion , milk, and 3/4 tsp salt. add ground beef/pork; mix well. Shape into 24 meatballs (about 1tbsp each). In large skillet brown meatballs in hot oil. Drain off excess fat. Drain pineapple, rfeserving syrup. Add enough water to reserved syrup to make 3/4 cup liquid.
Combine syrup mixture, barbecue sauce, orange juice concentrate, 1/4 tsp salt and pepper. pour over meatballs in skillet. bring to boiling. Reduce heat; cover and simer for 15 minutes. Combine cold water and cornstarch. Stir into skillet. Cook and stir til thickened and bubbly.
\Add pineapple and green pepper. Cover and simmer for 3 minutes or till green pepper strips are crisp tender. Serve over hot cooked rice.
