GF Oatmeal pancakes

Ingredients1/4 cup GF flour1 cup GF oats (grounds slightly in food processor)1 tablespoon splenda1/2 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon ground cinnamon1/8 teaspoon salt1 cup nonfat milk1 tablespoon Olive Oil1 large eggCooking spray
1. Process oats in food processor until about half the size.
2. Combine oats, flour, splenda, baking powder, baking soda, cinnamon, and salt.
3. Add in milk, oil, and egg into dry mixture stirring until moist. Let stand 5 mintues.
4. Heat a nonstick griddle over medium-high heat. Coat pan with cooking spray. Spoon about 1/8-1/4 cup batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles; cook until bottoms are browned.
Makes 2 three-pancake servings.
