Crab Cakes

Ingredients
1/4 C. Lite Mayp1 Lb. (Can) Phillips Lump Crab Meat1 C. Dry Bread Crumbs1 Bunch Scallions Chopped, include green tops1/4 C. Parsley1 tbs. old Bay Seasoning1/4 tsp. Lite Salt1/4 tsp Pepper3 Tbs. EVOO for cooking
Directions
Combine Crabmeat, 1/4 Cup Mayo, 1/4 Cup bread crumbs, scallions, parsley, old bay seaoning, salt and pepper. Shape crab cakes into 8 individual cakes and coat with the remining 3/4 cup of bread crumbs and pat off excess

Let chill in refrig. for 1 hour.

In nonstick frying pan heat oil over moderate heat, Fry cakes until golden brown, about 2 minutes on each side. Drain on paper towels.

I place in low temp. (200-250 deg) toaster oven until sides are ready.

Serve with Tartar, Cocktail Sauce or Horseradish Sauce.
