4 Egg3.5 c Soy Milk, or milk2 Tbs (Raw) sugar3/4 c. Canola (or other vegetable) Oil1 tsp Salt2 c quick cooking oats - dry2 c Whole Wheat Pastry Flour, 8 tsp Baking Powder
Lightly spray a non-stick 4-waffle iron with cooking spray. Heat until the ready -- light will go out.
Beat the eggs with a rotary beater until fluffy. Beat in the milk or soymilk. Beet in the oil. Beat in the sugar.
Add the oats and flour, and mix in with a fork. Do not beat smooth - some lumps are fine. Add the salt and baking powder and mix thoroughly. Add more milk or soymilk if batter seems too thick.
Ladle about 1 c. batter for each 4-waffle onto the griddle. Close the griddle and cook until the light goes out (about 5 minutes).
