Cottage Cheese, 1% Milkfat, 150 grams Spinach, fresh or defrosted frozen, 260 gramsSoya Flour, 50 gramsParmesan Cheese, grated, 25 grams Egg, fresh, 1 large Pepper, black, 1 dash 2 tsp oil for frying
Either defrost spinach, or if using fresh, chop finely and wilt in chosen method (micowave is easy).
Mix in egg, pepper and cottage cheese. Mix well.
Mix in flour and parmesan.
Form into small balls and place on a plate, chill for an hour.
Heat some oil in a non-stick pan, fry on a faily high temperature until browned and crispy on each side.
