Coconut Curry Sauce

Ingredients
1 tbsp Olive Oil1 Onion, peeled and chopped2 cloves garlic1/2 tsp cumin, ground3/4 tsp sea salt3 tbsp curry powder3 tbsp whole wheat flour (or spelt, brown rice, etc)3 cups Vegetable stock (we used our homemade)2 cups coconut milk3 large tomatoes, diced
Directions
Heat the oil in a saucepan over medium heat. Add the onion and garlic. Cook for 5 minutes or until soft.

Add the spices and cook for 1 minute. Add the flour and cook for another minute.

Stir in the stock gradually to prevent lumps forming.

Add the coconut and tomatoes, stirring occasionally.

Simmer for half and hour.
