Berry Muffins

Ingredients
2 C. Flour1/2 C. Sugar1 Tbsp. Baking Powder1/2 tsp. Salt1/2 tsp. Ground cinnamon2 egg whites 1 C. Strawberry blended Yogurt1/4 C. Buttermilk1/4 C. applesauce \1/2 tsp. Almond extract1 C. Frozen raspberries, blackberries and blueberries
Directions
Preheat oven to 400 degrees. Coat muffin tin with cooking spray.

Combine dry ingredients in large bowl.

Whisk together eggs, yogurt, buttermilk, applesauce (or butter) and almond extract in a medium bowl.

Fold the egg mixture into the flour mixture, until just combined. Gently fold in the frozen berries.

Spoon into muffin pan. Bake for 15-20 minutes.

Makes 12-16.
