Chicken Ambrosino "good and perfect and such"

Ingredients
4 boneless, skinless chicken breastsExtra virgin or light olive oil for sauteeing12 oz (1 1/2 cup) plain unsweetened almond milk2 oz currants (1 cup) 2 oz dates ( 1 cup, I cut into rounds)2 oz prunes (1 cup, I cut into 1/4), 1/4 oz (1tsp) fresh ginger, 1/12 whole (1/2 tsp) nutmeg freshly grated1/6 oz (1/4 tsp) cloves1/6 oz (1/4 tsp) saffron, 1/2 oz (2tsp) ground cinnamon
Directions
Brown chicken pieces in olive oil, until well but not over browned (this took about 15-20 minutes each side). Grind almonds for almond milk, soak ground almonds in 3times the volume of red wine or balsamic vinegar, or use store bought almond milk. Drain fat then return chicken to pan, strain solids from almond milk (if you've made your own) and add to pan with chicken, spices, splenda to taste (to balance the vinegar's pucker) and fruit to simmer down for sauce- until chicken is done by meat thermeter &/or juices run clear (it took approx. 30 minutes). Plate chicken then top with sauce, and slivered almonds.
