14 Corn tortillas, 4.5 inch1 can cheddar cheese soup(Campbell's)1 lb of chicken breast10 oz of enchilada sauce1.5 cups of shredded 2% cheese
Cook chicken breast using desired method. Shred chicken breast and add to pan with cheese soup.Heat through. Spoon a small amount of enchilada sauce on to the bottom of a casserole dish. Wrap tortillas in paper towel and microwave for 30 seconds. While tortillas are hot add chicken mixture to center and wrap. Lay seam side down in casserole dish. Repeat with remaining tortillas and chicken. Top the enchiladas with the remaining enchilada sauce. Place in oven at 300 degrees for 15 minutes. Remove from oven and top with shredded cheese. Bake for 5 more minutes or until cheese is melted.
