Sauteed Green Onion Mashed Potatoes

2 lbs russet potatoes, diced1/2 cup whipping cream1/4 cup (1/2 stick) butter1 bunch green onions, slicedsalt & pepper, to taste
Cook potatoes in pot of boiling salted water until very tender, about 15 minutes.
Meanwhile, in a medium size saucepan over medium heat; heat butter and saute onions, stirring often, for about 2-3 minutes. Stir in the heavy cream and bring to a soft simmer. Remove from heat, cover and let steep while potatoes finish cooking.
Drain potatoes thoroughly. Return potatoes to same pot and mash. Add cream mixture and stir until blended. Season to taste with salt and pepper and serve.
