Lentil and Feta Salad

Ingredients

1 cup dried green lentils1/2 cup slivered almonds1 english cucumber, chopped fine1 cup cherry tomatoes, halved0.75 cup feta cheese , crumbled 3 tbsp red wine vinegar3 tbsp chopped fresh oregano1/4 cup olive oil 2 cloves garlic1/4 cup chopped fresh parsley1/4 tsp salt 1/4 tsp pepper
Bring a large pot of water to a boil. Add garlic and lentils. Cook until tender (about 20 mins). Drain, rinse with cold water, drain again and discard garlic.
In a dry pan, toast almonds until brown, stirring often.
In a large bowl, whisk together olive oil, oregano, red wine vinegar salt and pepper.
Add lentils, tomatoes, parsley and cucumbers to olive oil mixture. Toss until well combined.
Add almonds and most of the cheese, holding some back for garnish on top. Voila!
